Our recipe uses tartaric acid I use Sophie Grigson's recipe too, although I use three lemons and omit the citric acid because I always forget to get any, and I'd read somewhere that you could just increase the number of lemons instead.
I have no idea how it compares taste wise as I've never made it any other way to compare, but I like it. I freeze it in old ice cream or soup containers and then just scoup out a spoonfull at a time, as there is so much sugar in it it doesn't freeze solid.
I'm still using last years and it's still good. I think maybe using the zest as in Sophie Grigson's recipe also adds more of a tang than just slicing the lemons. Bear in mind that the more elderflowers you add, the stronger the flavour, but there is no right or wrong with this recipe. Once open your cordial should be fine for at least 2 weeks, but keep it in the fridge, just in case. There is no right or wrong with this, it simply depends on how sweet you like your drink.
We use tap water, but you can try sparkling water for extra bubbly effect. It also adds a lovely sharp flavour to your cordial, which is normally difficult to achieve even if you add a lot of lemons. I would recommend to add a smaller amount of citric acid, gently stir it in and taste it. If you like the taste and flavour, leave it as it is or add extra citric acid if you want to. You can usually buy citric acid in a health shops, specialist food shops, pharmacies or places where they sell stuff for making wine or beer.
It usually comes in small container and costs no more than a few pounds or dollars. I order mine online, because I usually get large tub as I use citric acid for my traditional sweet making recipes.
Make sure that your glass bottles are completely clean and freshly washed. Place them on a clean baking tray and put them in the oven on C or F Gas Mark 4. Take them out after about 10 minutes. What is the ratio of both of them? My recommendation would be to use lemon in place of citric acid at the rate of 1 lemon for each rounded teaspoon of citric acid stipulated in your recipe.
The quantity you make will not affect the preserving time, which, as detailed in my recipe above, is 4 months in the fridge without sterilisation or 1 year if you sterilise after bottling. Hi Suzanne, thank you for such an informative article, its been so helpful, can I just check, when using the oven method to sterilize instead of the water bath, are the bottles loosely capped while in the oven or capped afterwards?
If using the oven method to sterilize loosely cap the bottles whilst they are in the oven but tighten them once removed. What do you think? I would treat it the same as making coffee rather than tea, i. Limes are absolutely fine as a replacement for lemons — they are actually more acidic but less juicy — use 4 limes in place of 3 lemons. If your doubling of elderflowers works I would be interested to know as the more it can be diluted the better from a sugar point of view.
At the suggestion of a young Austrian friend I added a large handful of lemon balm to my elderflower heads and it has made a delicious cordial. Looking forwards to trying other cordials also. Also, if you rinse the flower heads to remove any critters does it impair or reduce flavour? Yes, rinsing the flowers might would impair flavour so just shake them to remove critters. Vinegars vary in strength and flavour so I would stick to lemon juice.
